Traditionally speaking, the best-known alternate harmonies for most of the best-known carols can be found in the Oxford "Carols for Choirs" books (vols 1, 2 and 3 and there might even be a 4th by now for all I know).
Last year I purchased The Organists Great Big Christmas Book from Kevin Mayhew:

I found it to be a great additon to my music ... it takes the well known carols and then provides you with a couple of Preludes for each one, an alternative last verse arrangement, and then music for the end of each Carol if you want to play that.
Certainly worth a look.

Looks as if I will be adding that to my library, too. Hopefully I'll get it before Advent.

Sounds good, Jonesy. I'm getting a bit tired of wheeling out the same old tat year after year!
Does anyone actually have the tried and trusted last verse harmonies for Hark The Herald and O Come all Ye Faithful that they could put on here? I only need those two - and I only use them once a year!
