This is sort of what I would do. A little bit too cheesey for my taste, but not a bad effort at all. The key changes depend on whether it will lead in to the carol itself - keep it simple. As a challenge though, you could start somewhere outrageous and end in the appropriate key. That's a little game that I used to play when I was considerably more cocky - Ah, the arrogance of youth.
