I think most slow (usually the 2nd) movements are beautiful or as you say haunting/evocative etc particularly when following a boisterous movement this is IMO very evident with ShostakovitchI find the second movement of Tchaikovsky's 4th Symphony to be especially evocative and haunting.

Jean Sibelius--Symphony No.2 in D Dur, Op.43 and Symphony No.6 in D Moll, Op.104. Both works are performed by the London Symphony Orchestra conducted by Sir Colin Davis.
Peter Tchaikovsky--Symphony No.5 in E Moll, Op.64 and Symphony No.6 in B Moll, Op.74 {"Pathetique"}. Both pieces performed by the Berliner Philharmomo****r under the baton of Herbert von Karajan.
