Welcome Mostyn. I am assuming your wife is a classical organist as she requires 32 note pedal organ. I might suggest contacting local churches as many will give practice time for usually a small fee..some free; local music store, or if able to purchase a unit is an option also a virtual instrument( using computer as organ guts and adding keyboards through MIDI set-up) ) might be of interest as you are an electrician and cabinet maker. If you are in the US, contact your local American Guild of Organists Chapter ... you can find a chapter by using the AGO Regions site.

Local churches are often happy to have their pipe organs used for practicing students ... some may ask for a 'donation' to the coffers for the privilege, but it's worth a try.

I've made up some 'Virtual Organs for Dummies' webpages to add interest to a local organist association website. It covers the absolute basics of getting Miditzer and Hauptwerk's St Anne's Moseley to work. Very interesting site you set up, indeed. I believe helps a lot of "outside" people to understand the term virtual organ and what we are doing here....
he he... I liked that "a Wurlizer in the kitchen " ! funny, but this is the way it is, as a matter of speakin'...

I'll explore it in more depth in some days, too busy to finnish my latest disposition for jOrgan (a Bohemian organ emulation...).

Be aware that beside Hauptwerk and Midiger, there are also GrandOrgue and jOrgan in the game, with lots of free organ sets....
