Helloween had some symphonic stuff that interested me, with heavy strings arrangements. But they were semi hot in the late eighties.
I always thought Metallica had a symphonic quality about their early albums.
I'm stuck more in the eighties with metal.
I am going to check out these bands posted though.

Thank you!

I would say Nightwish, which was already mentioned. I cant quite recall any other ones right now.

Kamelot
Adagio
Nightwish
Within Temptation
Leaves' Eyes
Fairyland
Threshold
Shadow Gallery
Silent Edge (debut album "Eyes of the shadow", has to be heard to be believed!)
Arena

Some of those may be seen more as symphonic prog/rock, but no less good for that! Who needs pigeonholes? We're not birds, are we? :)

If you're into symphonic metal bands, I suggest you take a look at WHYZDOM. They're with the british label ASCENDANCE RECORDS (UK). They released an album with orchestra and choir the 21st sept 2009 : FROM THE BRINK OF INFINITY

They played with DELAIN during their french/spanish tour, and at the METAL FEMALE VOICES FEST in Belgium (other bands : EPICA, DELAIN, TARJA, DORO, etc...)

Here is their Myspace :
