Hi !
I use a cheap french software called Harmony-Assistant (see http://myriad-online.com/en/index.htm ).
It only costs 70 euros or 70 $, and updates are free for all your life.
For organ music, you need to buy also a special soundbank : Gold Base 2 (http://myriad-online.com/en/products/gold.htm) for 30 euros.
With this powerfull software, I compose and print all my music, even with my HP pavilion computer that has no soundcard.
With its very powerfull language script (in LUA) this software has no limits.

Ok, now you have really impressed my socks off ... composing pieces without being able to hear what you have wrote ... now, THIS is talent of a very special nature. I stand (well, actually sitting right now) in total awe of your splendid gift.
